Proper plates and panoramic views: modern British cuisine served with poise and panache

Refurbished in 2022, the two Michelin-starred restaurant is Swissôtel The Stamford’s crown jewel, perched on the 70th floor with sparkling views to match. Just as striking is the floor-to-ceiling hawthorn tree-inspired light installation fashioned from hand-blown Italian Murano glass, which holds court in the main dining room. The evening begins with a tantalising selection of British-inspired snacks, including a delicate ‘fish & chips’ topped with caviar, and the soul-warming charred leek and potato soup. A bread interlude follows, featuring dark rye Batard and a luscious butter roll, served with Devonshire butter and fresh lemon thyme leaves.
The dining experience is complemented by an award-winning list of over 700 labels. A standout: sweet, succulent poached Alaskan king crab crowned with Kristal caviar, masterfully paired with a 2022 Niki Hills Hatsuyuki, a refined white wine from Hokkaido. For a richer, more indulgent turn, there’s the Pyrenees baby lamb rack in sorrel sauce, accompanied by a beautiful 2021 Domaine Cassagne et Vitailles “Les Homs” Grenache. End the night on a high note with the caramel apple pie, served with Tahiti vanilla ice cream and warm English custard poured at the table.
