Caviar
A cosy, gleaming temple to opulent sturgeon roe
Ensconsed in the moneyed Palais Renaissance, the upscale restaurant by premium seafood supplier Jason Ong is dedicated to the lustrous briny black pearls. Diners are greeted by bronze stainless steel artwork inspired by swimming sturgeons and traditional ink block painting, before a sliding door reveals a cosy nook where champagne and pre-dinner canapés are enjoyed.
Eight varieties of caviar including Oscietra, Beluga and Kaluga Queen are available, and served in inventive dishes like the kaya (coconut jam) and caviar toast, uni pasta and a sake lees gelato harmonised with rich, savoury Magnum Opus Oscietra. Service is warm and unobtrusive, and the venue’s relative privacy make it an ideal spot for a business lunch or romantic dinner.
