Tamba
A vibrant celebration of West African flavours
A textured, tunnelling stairway of warm terracotta transports guests to the seclusive world of Tamba. The intimate 25-seater, founded by Kafe Utu’s Kurt Wagner, is a celebration of his Liberian childhood, as well as his late adopted brother whom the restaurant was named after.
Clay vessels and artefacts, and a stunning wooden mural crafted by renowned French sculptor Etienne Moyat add rich cultural dimension to the space and sets the scene for head chef Darren’s flavourful cooking. The classic jollof rice, served here with juicy sakura chicken and enriched with smoked pork belly, is satisfying and an easy favourite. If you can handle the heat, the fiery pepper soup (offal, seasonal seafood, habanero) is also a good shout, but careful – it’ll set your tastebuds ablaze.
Cool off with cocktails by award-winning bartender Joma Rivera. His Grass Cutter is a refreshing rum-based drink with lemongrass, pistachio orgeat, orange, lemon and Amontillado sherry.
