Sushi Hajime
One of Tokyo’s best-kept omakase secrets
The friendly and skilled chef at this omakase establishment in unassuming Nishi Sugamo makes what just might be the best sushi in town. Each fresh nigiri (raw fish over pressed vinegared rice) is exquisitely presented, one at a time, in a highly varied course that can last a leisurely two or three hours – a far cry from the brisk traditional 30-minute presentation – allowing diners to savour every buttery bite.
